Delicious Summer Treats… For the Kids and YOU!

summerEasy summer living is what it’s all about! Pool parties, beach days, an awesome 4th of July cookout, family vacation and many more long summer days filled with giggles, tanned skin, relaxed evenings and summer treats! Life is good!

…And when those hot summer days set in, what else happens? Kids crave ice cold popsicles and the adults start craving cold drinks and delicious treats of their own! Of course, that also means tons of sugar, artificial dyes and colors, and unnecessary calories. 

Feeling the “sweet treat” bloat while running around in a bathing suit is not exactly fun! At the same time, staying hydrated and cool during summer is crucial in staying healthy!

Here are some delicious, refreshing and healthy summer treats that will satisfy your cravings and refresh you, without the guilt!

Healthy Summer Treats for Adults

Fruit Infusions

In a blender, simply mix 4 cups of water, 2 cups of watermelon, and 1 cup of a favorite fruit like strawberries, raspberries or blueberries. Add 2-3 tablespoons of fresh lime juice, and stevia to taste if you want to sweeten it a bit more. Blend and then pour through sieve to filter out the solids.

You can then either add this fruit infused water into a pitcher to store in your fridge or pour it into ice cube trays, freeze, and then re-blend (with 1 cup of water) when ready for a frozen mixed drink!

Don’t be afraid to mix and match different flavored cubes and water infusions. The yummy combinations are endless!

Whipped Ricotta with Honey and Mixed Berries

What’s better than delicious berries, honey and ricotta? Mixing them, of course! This summer special is light and refreshing as well as refined, delicious and healthy!

Ingredients:

  • 2 cups fresh whole-milk ricotta cheese or fromage blanc.
  • 4 cups mixed fresh berries (such as blackberries, raspberries, and halved strawberries). Adjust the fruit ratio to your liking.
  • 4 tablespoons of honey
  • 2 Tablespoons of Stevia
  • 2 teaspoons of fresh lemon juice
  • 3/4 teaspoon Vanilla Extract

Blend cheese, honey and vanilla in blender. Transfer to a bowl and refrigerate until set (a couple of hours, or it can be done overnight).

In a separate bowl combine berries, 2 tablespoons of Stevia, and lemon juice. Toss to coat.

Equally divide the cheese mixture into small bowls or wine glasses. Add berries on top and serve.

(For an even healthier version, eliminate the cheese and use plain greek yogurt instead. Mix the yogurt, honey and vanilla in a bowl to serve immediately or store for later. Add berry mix on top and serve.)

Summer Sweets for Sweet Kids

 

Watermelon Donuts

This recipe is healthy, delicious and a fun cooking project you can do with the kids. All you need is a watermelon, one 14oz can of chilled coconut cream, vanilla extract and sprinkles.

Healthy Watermelon Donuts

  • Cut the watermelon into 1 1/2 inch slices. Lay flat then carefully cut out donut shapes in the size you prefer (an adult should do this part).
  • Pour the can of coconut cream into a bowl and let sit for a few minutes to allow solids and liquids to separate. Discard the liquid. Using a hand blender, blend the solid coconut cream until it fluffy. Add in a teaspoon of vanilla extract and blend for a few more seconds.
  • Spread cream “frosting” on top of your watermelon donuts and garnish with sprinkles.
  • That’s it! Refreshing, delicious, healthy and FUN!

Easy Healthy Popsicles

Follow the same instructions above for Fruit Infusions, but do not filter out the solids. Pour mixture into popsicle mold and freeze. Serve to kids to give them both a refreshing treat as well as a healthy serving of fiber and antioxidants.
